HCW or "Hot Carcass Weight" is determined by the butcher after processing, but before the beef has aged or been packaged for you to take home. HCW is not the same as what you'll take home. We charge by HCW to keep it simple and fair. Your actual final price may vary slightly from the list price once the butcher informs us of the HCW of your beef. This way you only pay for the beef you take home.
We love our beef and we think you will too. However, grassfed beef has a rich beefy flavor that you may not be used to if you're accustomed to store-bought beef. If you're worried you may not like it, contact us and we'll give you a free sample to try!
We raise Belted Galloways naturally, on pasture. Studies have shown grassfed beef to be healthier than feedlot beef.
Good beef doesn't need to come from Japan or New Zealand. Great beef also comes from Central NY.
We are committed to the best practices in safe food handling and environmental stewardship. All of our beef is processed in a USDA Inspected facility.

The 'ancient' Blakes settled our farm in 1895. Throughout the years it was a small dairy and sold hay. Since 2013 we've raised Belted Galloways (or Belties). As a Heritage Breed from Scotland, Belties are well suited for our cold winters. More importantly, they produce the most delicious beef when raised naturally on lush pastures.
